The true flavours of Tawari

Brian and Barry at Tawari Mountain Honey Ltd have a simple philosophy that is in order to produce the best flavoured honey in the world you have to love what you are doing, and we do. Taking our hives to Tawari Mountain every season from late November to January has been a thing with us for many years – we love doing it. We have become nuanced with each season’s changes in weather, bud burst and flowering pattens. I guess we know a lot about this wonderful New Zealand native Tree called the Tawari tree and importantly the delicious honey it produces.

You know for years we have been trying to build knowledge about the true flavours of Tawari honey and in every case, we have found that once people try our Tawari honey, they love it and want to buy more. We have gone out on a limb at times and partnered with local restaurant owners such as The Globe in Gisborne to run feature dinners called Honey Nights involving our local varietal honey.

To follow is just one example of what we tempted dinners taste buds with. This is a starter including raw Rewarewa and Tawari honey with gin and lemon cured salmon, Tawari honey compressed cucumber, picked red onion with Tawari honey – mustard vinaigrette. As you might imagine these Honey Nights have a been a roaring success with full restaurants and many happy customers.
